Mom's Soup and Dumplings

Cold wintery evenings are the perfect time to try a warm recipe. I adore soup, especially the home made variety and its almost a daily meal during the winter months. 


Something new for me is dumplings. My mom and I saw a feature on TV this week and thought we should add it to our soup this evening. I thought I'd share the recipe with all of you to try the next time you make soup. 


You will need:

  • 1 cup of cake flour

  • 1 teaspoon of sugar

  • 2 teaspoons baking powder

  • Half a teaspoon of salt

  • 1 tablespoon of margarine or butter

  • Half a cup of milk


Mix all the dry ingredients together and then add your butter/margarine and mix through slowly. Add the milk next to make soft dough. 


Put teaspoons of the dough into your favourite hot soup or stew, cover it and let the whole thing simmer for 10 to 15 mins. The dumplings should rise. (This should also work in the microwave if you're making soup that way.)
